Sticky, sweet, and irresistibly delicious, these medicated morning buns are the perfect way to start your day. They’re a labor of love but the final product will leave you licking your fingers in delight.
For the dough, you’ll need:
- 3 ½ cups bread flour
- 1 cup whole wheat flour
- 1 cup warm whole milk + ¼ cup cold milk
- 4 eggs + 1 egg yolk
- 1 package active dry yeast
- 2 tsp orange zest
- 1 tsp + ¼ cup honey
- 1 tsp Salt
- 2 tsp vanilla extract
- 1 cup Cannabutter
For the filling, you’ll need:
- 1 tbsp Cinnamon
- ¾ tsp Cardamom
- ½ cup Cannabutter
- ¼ cup of honey
- ¾ cup of light brown sugar
- Sanding sugar (for topping)
First, let’s make the dough. Bloom your active dry yeast in 1 cup of warm milk and add a teaspoon of honey. Let this mixture sit for a few minutes until the yeast starts to get bubbly. Separate your eggs and add in just the whites, 2 cups of bread flour, and the ¼ cup of honey. Beat this mixture together in a stand mixture until it is thick, and everything is well incorporated. Sprinkle 1 cup of whole wheat flour on top along with the remaining 1 ½ cups of bread flour. Don’t mix this in. Allow this to sit in a warm place in your kitchen to proof for 30-40 minutes. You’ll know it’s ready when the yeast begins to bubble up around the flour.
Next, once your dough has proofed, add in your salt, orange zest, vanilla extract, 5 egg yolks, and ¼ cup of cold milk to the mixture and mix well. Your dough will begin to form and will be slightly sticky. Allow your stand mixer to work the dough for 8-10 minutes before beginning to add your cannabutter. Add the cannabutter in a tablespoon at a time, allowing the cannabutter to absorb into the dough before adding more. Depending on the strength of your cannabutter, these morning buns will be quite potent. Your dough should be glossy, smooth, and soft. Cover and let it chill in the fridge for 8 hours to overnight. These aren’t called morning buns for no reason.
The filling is super easy to make. In a small saucepan, combine ¾ cup of light brown sugar, ¾ tsp cardamom, 1 tbsp cinnamon, ¼ cup of honey, and ½ cup of cannabutter. Cook over low heat until the cannabutter is melted and everything is thoroughly incorporated. Allow this to cool before using.
Retrieve your dough from the fridge and divide it into 2. This recipe makes 24 buns, so you’ll need 2 muffin tins. Roll out one half of your dough so that it forms a rectangle and spread half of the brown sugar mixture onto it. Roll it up into a tight log and chill in the fridge, seam side down so that it firms up enough to cut. Repeat this process with the other half of your dough. Once both of your logs are formed, slice them until you have 12 equal pieces from each log.
Spray your muffin tins with nonstick spray and place each roll cut side up into the cups. Let them sit at room temperature for 20 minutes. Preheat your oven to 350 degrees Fahrenheit. Bake your buns for 20-25 mins or until golden brown, being sure to rotate halfway through for even cooking.
This step is optional, but you can glaze your buns. To do this, heat 4 tbsp of cannabutter and ¼ cup of honey over low heat. You only need to heat it until the butter has melted. Brush the tops of your buns with this mixture and sprinkle with sanding sugar. If you don’t have sanding sugar, regular granulated sugar works perfect.
