The taste of a great sugar cookie is something that screams the holidays. Cannabidiol, or CBD, oil has become increasingly popular for its therapeutic effects minus the psychoactive effects of THC. I wanted to try baking with CBD this holiday season and what better way to incorporate CBD than in a delicious sugar cookie! This recipe is super easy, and you most likely have all of the ingredients in your house right at this moment. Let’s get started!

For the CBD Oil, you’ll need:

  • 3 cups coconut oil
  • 14g of cannabis
  • A large mason jar
  • Cheesecloth

CBD infused coconut oil is easy to make and can be used in a variety of baking as well as savory dishes! To infuse your oil, put your decarboxylated cannabis into a mason jar and cover with 3 cups of oil. To read more on how I decarb weed, check out my Easy Cannabutter & Best Pot Brownie article!

Put the covered mason jar into a water bath, making sure that the water comes up to cover at least ¾ of the jar. Allow the water to boil and the oil to infuse for at least an hour. I would do an hour, shake up the jar to assure all the contents are getting to know each other, and allow the coconut oil to infuse for another hour in the hot water with the stove turned off.

Strain your CBD oil through a cheesecloth to separate the decarboxylated marijuana from the coconut oil. Squeeze your cheesecloth to ensure every drop of oil is released from the herb. Make sure to store your oil in a cool, dark place since the terpenes are sensitive to heat and light.

For the sugar cookie dough, you’ll need:

  • 3 cups of flour
  • 1 ¾ cups sugar + extra (for rolling)
  • 1 cup CBD Coconut Oil
  • ½ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 2 Eggs
  • A pinch of salt

In this recipe I’m substituting coconut oil for the usual butter in the sugar cookies. It’s a 1:1 ratio, so rather than 1 cup of butter, we’re using 1 cup of CBD coconut oil. You can use your preferred fat for the CBD oil, like unsalted butter, ghee, or a neutral oil like canola or grapeseed oil. You could even use a blend of oils if you’re feeling fancy!

First, cream together your CBD infused coconut oil and the 1 ¾ cups of sugar. A hand mixer would be best for this job, but if you want a workout you can do this by hand with a whisk. Every granule of sugar should be incorporated into the fat.  To this mixture add in your eggs, vanilla and almond extracts, salt, baking powder, and baking soda.

Fold your flour into this mixture in thirds. This ensures that the CBD oil is evenly distributed throughout your sugar cookie dough. The dough should have structure but be easy to work with. You don’t need to chill your dough and can go straight into portioning out onto cookie sheets.

This recipe yields about 30-40 cookies, depending on the size of your cookies. I got 32 out of this batch! You can roll this dough out and use a cookie cutter, but I like to scoop out the dough with a spoon and roll it into a ball with my hands. This makes it easier to coat in the extra sugar.

Bake your sugar cookies in a 375-degree oven for 15 minutes or until fluffy, crisp and delicious! These cookies are best enjoyed after they’ve cooled. It really gives time for the sweetness to develop and the outside to firm up.

The outside is crisp, and the inside is soft and chewy. Sugar cookies are an amazing way to ring in the holiday season.
