This recipe is just as fun and easy to make as it is to eat and share with your friends. These are great as a game day snack or to bring to your next edible pot luck. It’s inspired by a recipe I saw on Tastemade’s Snapchat story combined with a house sauce from a restaurant called PDQ that I used to work at in college. The sauce was called Buffy Blue. Pretty self-explanatory: it was a mixture of buffalo sauce and blue cheese, and it goes great with absolutely everything, especially chicken. As soon as  I came across the original recipe, I knew there needed to be a medicated version out there for my fellow medical marijuana users. Now, here it is!

For this recipe you’ll need:

  • 2 6oz cans pre-packaged biscuit dough
  • ¼ cup melted cannabutter
  • 1 tsp grated garlic
  • 2 tbsp chopped parsley
  • 1 ½ cups cooked and shredded chicken
  • ¼ cup buffalo sauce
  • 2 tbsp ranch dressing
  • 2 tbsp crumbled blue cheese
  • 4 oz cream cheese
  • 2 tbsp chives
  • ½ cup shredded mozzarella cheese
  • ½ tsp salt
  • 1 tsp black pepper
  • 1 tbsp grated parmesan

First, preheat your oven to 375 degrees Fahrenheit and grease a cast iron skillet with butter. Pro tip: use cannabutter to reinforce the infusion of cannabis in this dish. In a bowl, mix together your cooked and shredded chicken, mozzarella cheese, 4 oz of cream cheese, ¼ cup of buffalo sauce, blue cheese, salt, pepper, ranch dressing, and chives. Make sure this is well combined since this will be the filling going into your biscuit bites. You can get creative with this and add in scallions or other seasonings like garlic powder, onion powder, paprika, cayenne pepper, or other cheeses like cheddar.

Next, open up your pre-packaged biscuit dough. If you’re more culinarily inclined, you can definitely make your biscuit dough from scratch. This will require more time and more ingredients so we’re going to keep it simple today. Using a rolling pin, roll each biscuit into about a 4-inch round. Place a tablespoon or two of the buffy blue filling into the center of the biscuit and roll it up into a ball so that the filling is contained. Pinch the edges to help it seal and place seam side down into the greased cast iron skillet. Repeat this process with all the remaining biscuits and filling.

Lastly, mix together your grated garlic, ¼ cup of melted cannabutter, grated parmesan, and parsley. Liberally brush this mixture over the tops of your delicious biscuit bites. This will not only help with browning but will give a lovely garlic bread flavor to your chicken biscuit bites in addition to the infusion of cannabis. These don’t take too long to bake. 15-20 minutes in the oven is all it takes to get these bad boys done! If you have garlic butter leftover even after brushing the tops of each biscuit, I’d recommend re-basting the biscuits halfway through bake time. I really hope you enjoy trying this out!
